Don,

I use wipe the same way you describe.  Do you know if it only wipes free space or if it also wipes slack space?

Allison, on windows you can use the cipher command to wipe free space on the system.  It runs in three passes filling 
up the entire disk.  It is the /w switch with the volume so something like 'cipher /w c:'.  You could set this as a 
scheduled task (no additional software to install).  We also recommend eraser and dban to customers depending on their 
need.

The Mac has 'Secure Empty Trash' which securely deletes/"shreds" the files in the trash can.

What you have found for the PC that is functionally similar, is easy to install/use, and is free or low cost?
