I'll triple vouch for Eraser. It's free and open source. In addition to it's "file erase" capability, it also has a "secure move" function and an option to "erase unused disk space" for those times when you forget to erase and already deleted the file. If I have to erase the entire drive I use Secure Erase http://cmrr.ucsd.edu/people/Hughes/SecureErase.shtml It uses the actual code built into disk drives for the last eight or so yea= rs and it is a lot faster than using other wiping programs. If you do use = a wiping program you don't have to do anything more than 1-pass writes.
