Microsoft Office Communicator may do what you want. The only feature you desire that I am not sure of is having 
multiple people chatting at once.

I need it to log all chat, be able to have multi people chatting at the same time in the same chat session. One that is 
easy to maintain, on the server piece and chat program. If there are any that will also work with MS enviroment since 
we are moving to a MS network. (It SUCKSSSSSSSSSSS) 

So any info would be great, plus thank you all for helping me out with this little problem.
