when is and how would the shift to IP ver 6 start ?

It has started. See www.6bone.net, www.ipv6.org etc

are there any IP ver 6 products out in the market,

Yes. All the free UNIX's (***BSD, Linux) have support
for IPv6, in addition so do most of the commercial UNIX's,
and even Chairman Billware has an IPv6 stack available (actually
there's 3 stacks to choose from).

A web search using your search engine of choice for IPv6 will
tell you a lot.

You can also take a look at http://oversteer.bl.echidna.id.au/IPv6,
where I've got a few links and items of interest.

There's also www.vbns.net, which (apparently) is native IPv6, instead
of IPv6 over IPv4, like most of the 6bone. Run by MCI.

IPv6 mailing lists are available: cf. www.ipv6.org/mailing-lists.html.
