These servers will be running multiple game servers from each unit.

Well, you could try OpenBSD?

I've just setup a game server for the local lan with  Counter
Strike and Quake 3.  Counter Strike installed and runs without any
problems ( old versions of the Half Life servers didn't work under OpenBSD
).  Quake 3 v3.17 installation had some problems extracting the files, so
installed it under Linux and copied the files over. I haven't run Quake 2
lately, but it worked under OpenBSD 2.5.
