It is important to know what database you are trying to use. There is an FAQ on http://www.stunnel.org that shows you how to make a tunnel by pointing snort to localhost or 127.0.0.1 and port 3306.
http://www.stunnel.org/examples/mysql.htmlIt is important in the snort output pluging configuration to use the correct localhost or 127.0.0.1 option. I can not remember which one worked for me, but that was the issue my friend and I had when setting up stunnel with MySQL.
NOTE: This faq references the 3.0 way of using stunnel, refer to the 4.0 reference for how to setup the config file
