Success!  Looks like MACOSX still doesn't do pcap descriptors well (or
at all).  Initial fix to get things working is to not use the
select(pcap_descriptor) call.

I'll play a little more with it but this at least gets things rolling.
Coincidentally the last time I messed with nmap on the iMac was
4.20BETA4! I'll try to keep up a little more frequency with testing
beta releases!
