An excellent out-of-the-box Linux appliance, very easy to configure and maintain, is Bering
http://leaf.sourceforge.net/devel/jnilo/With some minor tweaks and some additional modules I was in degree to use the Bering distribution to replace well-known commercial FW's with full satisfaction for moderate bandwidths (up to E1/T1 with 4 Ethernet interfaces) .
