How about how to and why should I encrypt files.  I assume you have covered why
it's not a good idea to write down passwords as well as discussed some of the
reasons for several if not all items in your security policy?  How to recognize
a secure website from a nonsecure one.  Do you reiterate the security policy? 
When I worked for several companies, I was just given the security policy when
I joined the company no one followed up.  So I could've just tossed the paper
and been none the wiser.
Why is using a VPN/SSH Tunnel a good idea (If you use them)?  Why should I keep
anti-virus/firewall/spam checkers on at home?  (Especially if you use a VPN)
