Here you go, Install snort in your networks. Its an IDS which parses thro packet and alert you virus/maclicous packets. If you are using linux desktops install clamav or openantivirus. To check spam use spamassasin- a module to mail server or a SMTP proxy like messagewall

Note: my firewall isn't my mail server. I was wondering if it could sniff connections to pop mail servers and detect virus code.
