BlueCoat can do this. IM is a difficult one to track due to its ability to port hop, but BlueCoat's port 80 Security appliances are able to track IM usage irrespective of which port it uses.

Their product is basically a proxy server - like Microsoft's ISA server but more secure - with caching, URL filtering, bandwidth management, and options to tie in with AV products like Finjan's SurfinGate and Symantec AV via the ICAP protocol.
