Books by Bandler and Grinder are the best, I'm told.
Bandler and Grinder are the seminal work on the subject, but their books are somewhat difficult to read - most of their work is either seminar transcripts or based on formal logic. For learning the history, they're interesting, but I'd suggest starting with Nicholas Boothman's books - they're far more accessible. Even Tony Robbins is more accessible in presenting the topics if you can get by the hype (and his teeth ;) More interesting than straight NLP is the body of work by Milton Erickson - much of Bandler and Grinder's work (esp. Trance-Formations and Frogs into Princes) was based on their time modelling Erickson. Erickson is widely regarded as the greatest hypnotherapist of all time... I wouldn't say it's useful for achieving world domination, but it definitely provides the ability to play around with language patterns in the same way I play around with inputs to a program. There's a definite "hacking the brain" analogy with hypnosis...
