Yes you probably are at risk...

Think of it this way.  The def files are a newspaper you are reading.  As long as the stories are in English you are 
fine.  Some time passes and they add stories in a new language (new App version).  You still can read the English 
stories but you just skip over the other language.

The defs for older types attacks would be recognized and acted on.  The defs for newer types of attacks may not be 
recognized.

Plus there is the possibility of AV program vulnerabilities (as mentioned by someone else).

Take a look at the update notes for your application and see what they say has been changed from your version to the 
current version.  Make your decision based on that.  It's not an infallible method. Some companies (M$ is the prime 
example) "forget" to mention all of the changes they make in a patch or upgrade.
