A few title come to mind - the first one is of course Schneier's Applied
Cryptography, which is a good all-round overview of cryptography.
Then there is Stinson's Cryptography: Theory and practice. A good
overview of security in general is Ross Anderson's Security Engineering
- it's not focused
on cryptography in particular, but it contains the basics of symmetric
ciphers and public-key crypto.

Your best investment comes from New Riders publishing.  They have a
series
of books focused on security mostly from and or by/overseen Stephen
Northcutt.  Network Intrusion Detection will teach you all about reading
"the wire".  Intrusion Signatures and Analysis will help you learn more
and
Network Perimeter Security is a good primer...
