Troubleshooting VOIP calls

I am attempting to figure out why call quality is soo poor, I have got a packet capture from our system with 2 calls in it. I am just not sure exactly what I am looking at. Reading through what I could find on google I think it looks like I am dealing with jitter due to latency. My packet capture shows: Max Delta: 1020 ms for both calls Max Jitter: (between 91-97) Mean Jitter: (between 39-41) No lost packets. So, I guess my question is how do I figure out why these values are so high? Is there any thing else I should look at in wireshark to give me an indicator as to what is going on? Thanks, Joe
