In the snort-2.<whatever> directory that was created after you 
un-tar/gz'ed it, go into the directory and type "make uninstall".  That 
should get rid of the automatically installed portions (like the Snort 
binary, and the man page..).

Then, rm -rf the snort dir.

That entirely depends on how it was installed. An uninstall in it's
simplest form would be where you rm the appropriate files. Was it
installed as an rpm? rpm -e package name should be good...
