We have had great results with Snort 2.0 on Supermicro in our recent IDS
tests - handled 100Mbps easily and looked like it could have gone much
further (especially if you use the built-in Gigabit interface)

I have had good luck with Supermicro.

They make PIII and P4 Xeon-based servers.  SCSI, ~16GB RAM 
possible, rack-mounts, all that fun happy stuff.  They are 
kinda like an i386-spinoff of low-end Sun boxes (chop +%50 
off the price).
