Sounds like you are describing a network sniffer with playback capability with the exception of the keystroke 
requirement. Network General - now Infinistream has a nice sniffer with playback that will do everything you describe 
including IP telephone conversations if your company has that.

Typically, a keylogger logs only keystrokes.  It will log all keystrokes
from any applications, windows, chat, etc. in sequential order, but it just
logs keystrokes.  We sell hardware keyloggers on our site here:

It you want to capture all activity and replay it, you might take a look at
Netwitness, but this is a beast of a different color.
