RE: NMAP Switches, -sS, -sT, etc.

I'd start off with initial scans against a selection of the more common 
ports i.e. nmap -sS -p 21,22,23,53,80,443,135,137-139, 445 and 1433,1434. 
These scans will take less time to complete and allow you to start your pen 
test without needing to wait for a full set of scans against all 65K ports 
to finish. The full scans will need to be run at some point but they can be 
run in parallel as you work on the initial subset.
