Fit-pc series FTW. The Intense PCs can run 16 GB, dual core i7, all the goodies, size of a mac-mini but more subtle, VESA mounts to piggy-back displays. I've run ESXi on them, pfsense, backtrack, you name it. Just ordered two yesterday (re-branded as MultiLAN) for the 6 NICs ... http://fit-pc.com/web/ If you want more of a netbook grade power, the older units like the fit-pc2 are great for dropped units, barely larger than a laptop hard drive.
