Unattended linux updates

I have heaps of success with un attended updates using RHEL/Centos.

Building you own RPM repository and only adding in the RHEL/Centos patches
that you have tested in the lab and having yum check and update these tested
packages hands free has worked well for me.

I also have to add my cudos for puppet especialy in combination with CFT
which is a RedHat emerging tech project http://cft.et.redhat.com/ and make
creating a puppet manifest a breeze.
