Zenmap should update these profiles automatically. That is doesn't is a
known bug.

Should I take it then that deleting ~/.zenmap/scan_profile.usp will result
in a most-current, more-correct profile replacing it? This should be done
just on updating versions, or more often?

You can do it whenever you upgrade. The only reason we don't do that
automatically is that the file is also where user-modified profiles are
stored, and we don't want to delete those.
