You should be able to hit 'd' to increase the debugging level or 'p' to
turn on packet tracing.

Unfortunately, I'm running nmap by calling a shell script with a bunch
of variables and stuff in it and when I try those tricks, nothing
happens.

Then there's no way I know of. Nmap is reading those keypresses from
/dev/tty, so it can't read your keypresses through the shell script. I
would start tcpdump and see where traffic is being sent.
