OS fingerprint are also in -oN output. You can just grep them out with "^OS:". Or did you have something else in mind?
I was looking to be able to scan around 10k network addresses and when that was done go to one file for all of the unmatched service and OS fingerprints. I had planned on pairing each fingerprint with the address, hostname and port information (for services).
