There are different types of honeynet deployments you should consider based
on the level of interaction you wish to provide to your enemy/attacker.
 
Low interaction
Medium interaction
High interaction

Lance Spitzner's new book, "Honeypots, Tracking Hackers" is a thorough read
about the many types of honeypots one can deploy.
