If you are on exchange 2007 there is an easy wipe feature in the manager as well as the user OWA interface. Exchange 2003 has something as well but it's a download from MS that needs to be installed. We found out during testing that the exchange 2007 wipe feature will also wipe any memory cards in the device as well.
