And just to add our $0.02 on the subject:

We currently use SGUIL (real-time monitoring front-end that uses Snort as its
backend) for our monitoring, a couple of people have developed Snort
signatures (Bleeding Snort) that can detect credit cards and SSNs as they are
transmitted through our network.
