Well, there is the "Server" HTTP header.

Example:

Server: Apache/1.3.29 (Unix) mod_perl/1.29

bah, thats what I thought, so I guess it would be safe to say that there is no indication of when a server was last 
patched/updated in the http banner?  Only indicates when the page being returned was last modified.
