Juan,

Why not tunnel the SMTP and/or POP3 sessions over SSH? Then you can
avoid the risk of MiM attacks  for the most part.

If that isn't an option, look at PGP, GPG or any other encryption
software out there.

You can save off the signed mail address into your address books on either end, and once the recipient has the 
senders public key, they will be able to encrypt any future mail sent to that sender.   Look under mail send options 
(security). Pretty simple, very flexible, works well with outlook.

two outlook clients, does anyone knows about such a
free tool?

and what doing the same between an outlook client and
web mail like yahoo? is it possible?
