packet sample collection problem

guys,

were planning to gather normal packets for our viruswall testing,
whats the faster and efficient way to do this?

our nitial plan is to gather normal packet from our internal network,
and i should have the option to arrange/save the packet in raw format,
by port/protocol.

any suggestion?
