'Essential System Administration' by Aeleen Frisch, Published by 
O'Reilly, ISBN 0-596-00343-9 and currently on it's 3rd edition. Best 
book ever for unix system administration.

Not specifically security, true, but security and clean, organized & 
elegant system administration are usually (or should be) inseparable 
anyways.

Also, read, research and play around with the stuff on 
packetstormsecurity.org religiously.
