How do I make it listen to an interface?

What about forwarding all packets to the tun0 interface and sniffing that?

I don't know how to do this in OS X.

I've just discovered that when I start Snort with -i en1 it indeed takes down my wifi association. But then I went
into Network Manager and set up the connexion again, and it came up no problem, presumably with Snort listening since
it's still running. I don't know why starting Snort required what seems to be a new network domain, and I don't know
whether it will survive reboots, but experimenting.

BTW, I was looking for the Spade plugin, and can't find it anywhere. Has it disappeared?
