Usable Stego

I'm not familiar with PDF watermarking tool but metadata springs to mind as the place to store it. How about non-printable (or at least non-sensible) ASCII or Unicode signatures added to each copy? It would be hard to see with the naked eye but would be damaged if the metadata is stripped from the file. Which makes me wonder if there are any tool to strip out PDF metadata.
