If you are looking for MRTG type graphs, check out http:// www.cacti.net/. Fantastic open source program. Will do snmp calls to your switches, routers, servers, what every supports snmp. It graphs the amount of traffic on an interface in the network. We have it running on every interface on a network with over 5000 devices.
If you want to know what traffic is actually on that wire, ntop. You need to span a port or put a hub in line to get ntop to work. It will give you more information on what type of traffic is on the line than what you need.
