There isn't an open source tool that does this
but there is one good commercial tool called
SMB File Sniffer (http://www.microolap.com/products/network/smbfilesniffer/).

As for smbspy you can find on security live CD
BackTrack(http://www.remote-exploit.org/backtrack.html).
