VMWare workstation has the snapshot feature... VMWare Server (and it's big brother ESX) are focused on running machines in production. They run on production operating systems (Windows Server and Linux). The have tools for running many machines from a shared console. Of not, all of their betas are generally free downloads (I downloaded workstation 5.0 beta for free anyway) and they all expire. If this is going to be free for good, I would still expect the beta to expire since, "that's how they do it."
