DLT_FLEXRAY
DLT_MOST
DLT_LIN

I've assigned those:

DLT_FLEXRAY 210
DLT_MOST 211
DLT_LIN 212

If you can indicate what the packet formats would be (assuming it's not obvious from the protocol specifications for those buses - for example, if you add pseudo-headers giving information not available from the raw packet data), that would be helpful, so we don't have different packet formats using the same DLT_ values.

DLT_X2E_SERIAL

So what's the description of that one? Presumably from the "X2E" it's defined by your company, so there's no reason to expect that anybody else would have a reason to use it incompatibly.

As there is already a DLT named DLT_CAN20B, there is no need for another
CAN DLT.

You should probably ask Gianluca Varenni whether the format they use at CACE Technologies matches the format you want to use, if you haven't done so already.
