Trisul is awesome for this. I've been using it for over a year and it offers a three day rolling window of data 
collection to check it out. Can't say enough good things about it. Also integrates your snort alerts so you can 
correlate those as well.

This is exactly what trisul.org purports to do. I've not tried it, but it got a mention on a SANS list.

Some of the lower-end UTM appliances might be in your budget.
