Wow. that was it: I needed the `make disclean`.  So it didn't matter if I ran 
a new ./configure, it was still making using the script generated from the 
./configure I ran before without the mysql switch, huh?

snort src and rerunning the configure script. Pay particular attention to
the output of:

  "checking for mysql..."

If the mysql libs are found then when you compile snort, you'll see the
switch "-DENABLE_MYSQL" being passed to the compiler when you run `make`.
