Actually, this is exactly what we do with SGUIL 
(http://sguil.sf.net). We have a second snort process that is logging
all packets in pcap format. The analyst can then look at an event
generated by the main snort process and drill down to a view of the
entire session.

We have a live demo up that you can play around with.  Go to the above
