cvs (concurrent versions system) is used by many open source projects to allow developers to work in a distributed/simultaneous fashion. Usually when you download a cvs version of a given software, it means that you are getting the latest snapshot (or the bleeding edge if you prefer) of the software. You can think of it as some sort of alpha software in the c'al world. At any given time, the cvs version might contain bugs or other stuff that you won't to be dealing with in a production environment. That's why there is a stable version. A stable version is a snapshot of the cvs version considered to be stable enough to be released to the general public.
Which better version to use?
Depends on what you want.
