The small form factor (RJ45 size) Linux is called the Digi Connect ME (picotux). It has only one ethernet port, so you can't directly use it for bridge/sniffing (except if you decide to arp spoof or use some other technique to redirect traffic). Otherwise, you should have a look at the wrap routers (pcengines.ch). These devices are great, they have a i586 compatible processor and the case design is nice (good metal finish).
