I've looked at micro controllers with Ethernet adapters, but here I find
web server appliances with just one network interface. They're small but I'm
not sure if you could run an OS and a sniffer on them. I've looked at
mini boards but they are very expensive, too expensive for "just a toy".

There is a small routing/bridging platform which basically just looked
like a RJ45/RJ45 jack. It was capable of running Linux and NetBSD, so
you could also configure it as a switch and put it in between two
cables. However, I can't seem to remember the name of the product too
well.
