Greetings

I would suggest trying mpentoo.I is easy to maintain and easy to customise.
I run around with one minidisc in my wallet.Additionnal modules and
the such can go to the USB .So actually withou resorting to modules
you can install programs into you're USB and have them ready on start
up.If you need help with it let me know.

For Gentoo in general there is also

LFS is maybe the best on the long run but it is rather hard to work
with specially if you have some time constraint and little knowledge
of linux systems in general(but it is a great learning instrument
too).

I would not go with debian in general for live CD but that is a bias
personnal opinion.
