How about p0f? It's pretty neat, and includes a largish database. It's used in several places, for instance the *BSD packet filter pf has a module, and I believe IPTables has one too. Plus there are likely quite a few tools that use it. (On a side note, how about trimming the sig a bit? If someone really wants to send me a GPG signed mail, for instance, they can always check the headers...)
