Paul, You can use these options to the configure script when building from source: --without-ncat --without-nping --without-ndiff --without-zenmap --without-nmap-update --without-liblua --without-libssh2 --without-openssl Note that this will disable all NSE scripts and a lot of the -sV version detection, since Nmap will be unable to probe SSL/TLS services.
