It depends on the OS and the method being used.  If you set the
option
to "2" on Linux, it will do MTU probing constantly and react to MTU
changes.

Must be magic then, because it works for me.  I've got a few dozen servers with MTU 7500 that aren't having a bit of 
trouble talking to anyone.
