One day I bit the bullet and RTFM (and a book) and now I don't find it so frustrating ;) I have in the past used SmartDraw (http://www.smartdraw.com), it's commercial, but IMHO resonably priced, and I found it quick and easy to whip up network diagrams with it. It's also pretty good at flow charts.
