For the SMTP server, you could identify it using something like nmap -sV
Then you could play with THChydra to bruteforce it and/or use a fuzzer to try to find vulns

btw you can find a lot of tools and exploits in the nice Whoppix LiveCD ( http://www.whoppix.net )
