Eatery served pork as veal
Bella Mia owner, chef admit switch

A prominent downtown San Jose restaurant has admitted that for at least 
five years it has been serving pork and claiming it was veal. Bella Mia 
executive chef Gary Kjolhaug, 41, said Tuesday that he has been using pork 
tenderloin in the Italian dishes offered on the menu as veal parmigiana 
and veal scaloppine for ``probably five or six years.'' The owner didn't 
know of the substitution, Kjolhaug said, until confronted with the results 
of a Mercury News investigation.
